Creamy Garlic Mushroom Pasta
Creamy garlic mushroom pasta in 25 minutes: properly browned mushrooms, a glossy cream sauce and wide ribbons. The weeknight dinner that feels special.
Some dinners earn their place by being complicated. This one earns it by being ready in twenty-five minutes while tasting like a small occasion: tagliatelle folded through a glossy garlic cream sauce with mushrooms cooked hard enough to actually brown — which is where all the flavour lives.
Jump to section
Mushrooms are mostly water, and the difference between a pale, steamed mushroom and a golden one is patience and a pan that is not crowded. Cook them in batches, leave them alone to colour, and the sauce has something to build on.
Why this recipe works
The sauce is built in the mushroom pan, so the browned bits left behind dissolve into the cream — that is the depth people describe as “restaurant-y” without knowing why. A mugful of the pasta cooking water, starchy and hot, loosens the cream and helps it cling to every ribbon instead of pooling in the bowl. Parmesan goes in off the heat so it melts into the sauce rather than clumping.
The key ingredients
A mix of mushrooms is lovelier than one kind — chestnut mushrooms for body, a handful of something wilder if the budget allows — but a full tray of chestnut mushrooms cooked properly beats a fancy mix cooked badly. Use tagliatelle, pappardelle or fettuccine: wide ribbons hold a cream sauce better than thin strands. Fresh garlic, grated or crushed, not the jarred sort, which tastes of the jar.
Tips for glossy, not greasy, sauce
Have everything ready before the pasta goes in; the dish comes together in the last three minutes and waits for nobody. Toss the pasta in the pan with the sauce for a full minute over the heat so the ribbons absorb flavour, adding pasta water a splash at a time until the sauce shines. Finish with lemon zest if you like brightness, and plenty of black pepper. Storing the parsley properly keeps it fresh for garnishes like this — see how-to-store-fresh-herbs-so-they-last-longer.
Storage and reheating
Cream sauces are best fresh, but leftovers keep two days in the fridge. Reheat gently in a pan with a splash of milk or water, stirring, until the sauce loosens and coats again. Do not boil it hard or the cream may split.
Frequently asked questions
Can I make it without cream?
A mixture of crème fraîche and pasta water works and adds a pleasant tang; add it off the heat. Cream cheese thinned with pasta water is another reasonable stand-in.
Which mushrooms are best?
Chestnut mushrooms give the best flavour for the price. Portobello, cut into thick slices, are excellent too. Avoid button mushrooms if you can — they are mostly water.
Can I add chicken or bacon?
Yes. Crisp diced pancetta with the mushrooms, or fold through leftover roast chicken at the end just to heat it. The sauce happily carries either.
Creamy Garlic Mushroom Pasta
Ingredients
- 320 g tagliatelle
- 2 tbsp olive oil
- 40 g butter
- 500 g chestnut mushrooms, thickly sliced
- 3 garlic cloves, finely sliced
- 1 tsp fresh thyme leaves (or 1/2 tsp dried)
- 200 ml double cream
- 50 g parmesan, finely grated, plus extra to serve
- 1/2 tsp lemon zest (optional)
- Small handful of flat-leaf parsley, chopped
- Salt and plenty of black pepper
Instructions
- Cook the pasta in well-salted boiling water until just shy of done. Reserve a mug of the cooking water before draining.
- Meanwhile, heat the oil and half the butter in a large frying pan over a high heat. Cook the mushrooms in a single layer, in batches if needed, for 4-5 minutes per batch without stirring too often, until deeply golden.
- Return all the mushrooms to the pan, add the remaining butter, garlic and thyme, and cook for 1 minute until fragrant.
- Pour in the cream and a splash of pasta water and simmer for 2 minutes until slightly thickened.
- Add the drained pasta and toss over the heat for 1 minute, loosening with more pasta water until the sauce is glossy and coats the ribbons.
- Off the heat, stir in the parmesan, lemon zest if using, and parsley. Season boldly and serve at once with extra parmesan.
