Slow Cooker Beef and Butternut Curry
Slow cooker beef and butternut curry: braising beef, sweet squash and coconut, loaded at lunchtime and ready at dinner — a set-and-forget family favourite.
This is the curry to load at lunchtime and forget until dinner: braising beef that surrenders into the sauce, butternut squash that sweetens it, and coconut milk rounding everything into something that tastes like a Sunday project and behaves like a weeknight favour.
Jump to section
The slow cooker does the long work, but the first ten minutes still matter. Browning the beef and blooming the curry paste in a pan before they go in is the difference between a curry and a stew with curry in it.
Why this recipe works
Braising beef is full of connective tissue that only melts given hours at a low, steady heat — exactly the slow cooker’s one talent. Rushed in a fast curry, the same cut stays chewy; given six hours it falls apart at the suggestion of a spoon. The butternut goes in from the start in large chunks: over the long cook it softens to the edge of collapse, and the pieces that do break down thicken the sauce naturally.
Coconut milk can split over a long cook if it boils hard, which is why this curry lives on LOW. The sauce will look thin at the halfway point and right at the end — patience, plus ten minutes with the lid ajar if you want it thicker. Browning the beef in batches matters more than it sounds, too: crowded beef steams grey instead of searing, and those browned edges are where the sauce’s depth comes from. The pan takes four minutes to wash; the difference lasts the whole dish.
The key ingredients
A good ready-made curry paste is the honest shortcut here; choose a medium one you like the smell of, because the whole dish is built on it. Tomato purée and a stock cube quietly add the savoury depth that a short ingredient list would otherwise miss. For curry night on the hob instead, our Weeknight Chicken Tikka Masala is the 40-minute counterpart.
Tips for slow cooker success
Fill the pot between half and two-thirds full — less and it cooks hot and fast, more and it steams unevenly. Resist lifting the lid: each peek costs the pot around fifteen minutes of heat. If your squash is pre-cut in small cubes, add it for the final two hours only, so it keeps its shape.
Storage and reheating
Like most curries, this improves overnight in the fridge and keeps for three days. It freezes for three months; defrost in the fridge and reheat gently until bubbling throughout, loosening with a splash of water.
Frequently asked questions
Can I cook it on HIGH instead?
Yes — 3½ to 4 hours on HIGH. The beef will be tender, though a fraction less silky than the long LOW cook.
What should I serve with it?
Basmati rice (cooked the reliable way), natural yogurt, and extra coriander. Naan for the sauce that’s left.
